It was the day… The day to head to Kansas City to watch the Chiefs in the Playoffs. They were divisional Champions and now it’s time to claim victory… I’d like to say the day went as planned, but sadly, it didn’t…

If you follow baseball at all (which sadly I don’t) you’ll remember that about the time of the World Series in 2015, Kansas City was painted up blue to support their team. Well this year as the Chiefs made the playoffs it was time to swap out the blue for Red.

Our noon thirty game against the Pittsburgh Steelers was pushed back to a 7:35 game so we had plenty of time to make it to Kansas City. Other than the fact, you know… they opened gates like 4 or 5 hours before the game where normal game its like 2 hours or something like that. Don’t quote me on times, I’m just usually where I’m supposed to be when I’m told to be there.

Playoffs 2017 – Kansas City Chiefs versus Pittsburgh Steelers

This happens to be hubby and my second playoffs game to attend. This year though, it was a home game!! We were division champions which gave us a bye-week and then a home-field advantage game. I wish I was into baseball more than I am… but if you remember back in 2015 when the Royals were on their way to winning the world series, Kansas City was painted blue… well with the Chiefs in the playoffs, Kansas City painted the town RED!! Because remember, this is Chiefs Kingdom!

Initially, our game was supposed to be a noon thirty (12:30) game, but we got a notification a couple of days before (if that) that it had been moved to a 7:35 pm game. The gates opened for tailgating like 5 or 6 hours ahead of the game where normally it’s a couple. It was CRAZY!

Fruit Fried Pie – The Filling

If you were to ask me what my favorite kind of pie was… well I have 2. I love Cherry Pies but I also love Coconut Cream Pies as long as they aren’t topped with Meringue. I’m not a big fan of the Meringue. I have a hard time deciding between the two as my top favorite. I also love Banana Cream Pie, especially with a graham cracker crust. Dang, for the amounts of sweets I’ve eaten these last couple days, I can’t believe I’m even thinking of sweets! You have no idea!

So let’s focus on fruit pies because really, we’re putting these in the fried pie dough and I’m not sure coconut cream pie would taste very good in fried pies. Although they do have chocolate fried pies, but we’ll just stick with the fruit fried pies because… well… that’s what I choose to do 😀.

So our first filling is Cherry Pie filling.
Ingredients:
3 Cups cherries
Sugar
Corn Starch
Almond Flavoring (optional)
Water
Lemon juice
salt

The cherry pie filling we made for these fried pies is actually a little different than my go to Cherry Pie Filling for a normal Cherry pie. It was good, but just a little different.

Start by placing 1 cup berries in with 1 cup water and 3/4 to 1 cup sugar. Bring to a boil and add 2 tbsp lemon juice, dash of salt, and 1/4 cup cornstarch stirred into 1/3 cup water. Bring to a boil and stir until thickened. Cool slightly and add 3 cups fresh or frozen berries. Now you want the filling to be really thick so add a little more cornstarch slurry if need be to have a real thick mixture.

Fried Fruit Pies – The dough

If there is one thing I can tell you I shouldn’t do when I’m tired, it would be bake or cooking in general. I make mistakes, I forget things, it’s just not good. Take my word for it. I’m actually sitting here thinking maybe I shouldn’t blog either, but this was when I had a minute and I wanted to so bear with me. And I may or may not have a cake in the oven… don’t let me forget to go check it!!

So let me paint you the picture… a few months ago (okay maybe over the summer… that’s a few months right?) I attempted to make Cherry Fried Pies. My goal was to make the filling, make the dough based off grandma’s recipe, and bam, we’d have fried pies. Yeah, better thought than actually what happened.

It turns out my filling was way to runny. So I pulled out muffin tins, placed the dough inside, filling and then I think topped with dough and baked them. I can’t really remember. I do remember they tasted good but they sure weren’t fried pies. I had friends over at the time and we got a good laugh so it was worth it, right?

I told them we’d try again. Today was that day. Karen came over and we went to my grandma’s house. It was time to go to the fried pie master and have her show us the tricks. As we were watching the weather, or at least I was watching the weather, I had a fear that the ice-pocolips that they said was coming would hinder our plans but it didn’t! In fact, things didn’t get nearly as bad as they predicted, so that’s good right?

We laughed. We might have thrown eggs across the kitchen (wasn’t me!) or dumped the corn starch because we were trying to take a picture (guilty!) or gotten corn starch on our boot (guilty again!) or whatever. It was a great day to spend in doors (brrr!) with family and friends. And we learned a lot from grandma too! Oh and if your noting mistakes… neither of us can apparently count 12 balls of dough. Karen got 13, I came up with 16. Don’t ask I have no clue!

We can haul a gooseneck

When hubby bought his truck, it’s a 3/4 ton Ford without gooseneck trailer hauling abilities. That seemed extremely crazy to me. Normally a bigger truck has the set up to haul a gooseneck trailer and when most of your trailers are gooseneck’s… you kind of need that ability. We did our research and we were able to purchase a B&W Turnover ball to place in the bed, all we had to do was drive out to Humboldt Kansas to the factory to have it put in.

Neiman Marcus Cookies

I have been on a cookie kick somewhat lately between all the dozens of sugar cookies I’ve made to the no bake cookies to Neiman Marcus Cookies. I guess after a long day, especially if it hasn’t been ideal, it’s nice to know you can go into the kitchen, mix sugars, butters, vanillas, and flours in a specific order and voila, you have cookies or cakes or whatever your little heart desires. Now that I come to think of it, isn’t it weird that you can use the same ingredients for cookies as you do for cakes and they turn out with different substances? Just an interesting thought there.

Bye Week

I googled it. It says it is correct: Bye Week but could be by week or it could be bi week. So you call it what you want but know I’m talking about the off week that the Chiefs didn’t have to play because they were sitting second seed!

What what? or Woot woot if you prefer 😁.

So unfortunately Grady wound up back in the hospital due to his surgery before Christmas. Jared and hubby conjured up a scheme that we were going to go sit in his hospital room with him and watch the Dolphins Steelers game and the New York Green Bay game on Sunday, but he was able to “break out” on Saturday night so we changed our plans and decided to make lunch and go to their house to watch the games. One was at noon and the other at 3:30. The game plan was to make a day of it 😀.

The game plan for the meal (yes, I keep saying game plan, going with the scheme of the day….) was chicken wings because why not? Hubby made some of his “famous” salsa and the wings and carrots/celery and as a last minute thought, No Bake Cookies!

No Bake Cookies

The other day my friend Jared asked if I knew how to make No Bake Cookies. That’s another one of those easy things that I’ve never really tried. That might be a partial lie… I tried one time but I was like 20… now I’m 33 (I think, I can’t ever remember my age, just my birthday).

A while back a girl I went to high school with posted pictures of No Bakes on Facebook and someone asked for the recipe. She said they were extremely easy and shared her recipe which I quickly snatched up. Then I forgot where I put it.

When Jared asked, I went on the hunt for that recipe. After about 10 minutes of searching my laptop and external drive (which won’t open now but that’s another story for another day) I finally found the recipe so I went into the kitchen and made some. Oh boy am I glad I did! They are awesome!!

I grabbed a pan and went to town. Now at the time I was at Deb and Grady’s and they drink 1% milk so that’s what I used. Let me tell you, you couldn’t tell a difference, they were that good!

Our New Year’s Eve

New Year’s Eve I woke up thinking about the Beer Cheese Fondue we had the year before. We didn’t have any plans so I asked hubby if he’d be interested in doing that. He said sure. I also asked my parents, grandma, and mother-in-law. Low key and good food. We had to get up early the next morning so it was perfect for us. (and yes, I was in bed by like 10:30… I’m in my 30’s 😉)

I also saw this on facebook and laughed. It’s probably true…

Greek Omelet

I get made fun of a lot for reading recipes to cook and for the fact I can make difficult things but when it comes to the easy stuff, like eggs, I don’t have much experience there. Strange right? I guess I taught myself to cook with the help of both of my grandma’s from recipes though so that easy stuff that you don’t have recipes for I’m at a loss.

Back in December when we went to Ft. Worth, we ate at a restaurant called Ol’ South on University that is known for their German Pancake. I can’t say I’m just a huge fan of the German Pancake though so I went with a Greek Omelet. It was nice too, that it kind of fell along with the “diet” I’m doing. And I know I know, you’re not supposed to call it a diet these days… that’s why the quotes 😉.

My Greek omelet was egg whites, spinach, Feta cheese, and black olives. I decided I could probably recreate that at home, right? You know, no experience making eggs and all but surely I could, right? Enter my latest cookbook… Eat Like a Gilmore: The Unofficial Cookbook for Fans of Gilmore Girls. I got it sometime after we got back from Ft. Worth and I was flipping through it. I happened to see an Egg White Omelet recipe so I decided to read through it, and then add my own fillings/toppings.
