It’s back to school in these parts. I was looking at all the back to school photos on Facebook. I was wondering if I’ve screwed up by not putting Abug in Preschool this fall. She’s only 3. But she is 3. back and forth. Round and round I went. Where I stopped, well feeling lousy about myself. I’m still not sure how I feel about the situation, but we won’t dwell on that another day…. at this point anyway.

Btw, my kid loves school. I hope she always does. Secretly her momma was a nerd. I tried to keep that fact hidden my whole school career, but I’m not sure I was successful in hiding that fact. Heck… I could have goofed off my senior year of high school and instead, I took trigonometry and AP Chemistry as two of the higher end courses. Plus Language Arts 4 and I can’t remember what else. And school supplies. Don’t even get me started on school supplies.

I never was one of those kids that went back to school clothes shopping. If I needed new clothes, I got them. If I didn’t… well we never made a special school clothes shopping trip.

I LOVE school supplies! But, I think my mom dreaded taking me for those too. ha! One thing though, I remember I always wanted the big what 64 box of crayons and usually didn’t get them. Most times I didn’t even get new crayons every year. The ones from the previous year would suffice. And I always felt like a weirdo not pulling out that brand new shiny box of crayons at the beginning of the school year.

That’s okay…. My mom bought me that big 64 box of crayons this last spring to make up for it… lol. Then my daughter proceeded to get into them, tear them apart, and they are strung all over the house.

I’m really getting off topic though. Because we’re here to talk about……

Lunchroom Lady Brownies

The day I was having a wonky day, so was Abug. It just wasn’t our day. It was a Thursday (last Thursday in fact) just like today is a Thursday. When I was working a few years ago, I developed this huge dislike for Thursdays. Why people would ask… it’s the day before Friday. Ah, yes but it’s the day before Friday was always my response. It was the pessimistic side of me talking… my thought… it was Thursday, NOT Friday. Since then, I’ve really had this general dislike for Thursdays. They are not my friend.

So last Thursday Abug and I decided that making brownies would make our day better. She LOVES to bake with mommy, so I decided to turn the reins over to my three-year-old and let her make brownies. WHAT?!?! Have I flipped my lid? Well yes, I may just have, but it’s okay. Great learning experience! Now… let me clarify, I was in the kitchen the whole time with her. I put the brownies in and out of the oven, I cut the brownies, and I helped read the directions and measure the ingredients. She did the rest.

You don’t believe me? Well, stay tuned to the bottom because I have a video that will demonstrate that indeed my three-year-old bakes.

My dad sent me this recipe via Facebook. My dad has been on Facebook maybe a year now. Every so often he sends me a recipe. And then when something gets said about making food and I’m like I don’t know what to make, he chimes in and says, well I send you recipes.

This happened to be one I had stuck in my head for a while I wanted to make, but during the summer it is hot. What does that have to do with the price of rice in China? Well… hot outside, air conditioner on inside. The oven heats up the house. Air works harder, etc etc. That’s my mom talking. haha. But last Thursday was a lovely day outside.

Are we sure it’s August and not September or October? Not that I’m complaining… Just last night my hubby made the comment we’re due for a really good snow….

I keep getting side tracked. I guess I’m looking at these pictures and really wanting brownies. But they are all gone. NOOOOOOO! Yes, yes they are. They were that good.

So here is where I’ll dump the video to prove that in fact, my little girl can cook.

Things to note:
  • These brownies were excellent
  • They are easier to cook with a 3-year-old than cookies
  • They are all gone
  • I want more
  • Who wants to make me some? takers?

And now the recipe….

Lunchroom Lady Brownies

adapted from All Simply Recipes

For the Brownies:

  • 1 c Butter.
  • 1/2 c Cocoa.
  • 2 c Flour.
  • 2 c Sugar.
  • 4 Eggs.
  • 4 tsp Vanilla.
  • 1 tsp Salt

For the icing:

  • 1/4 c Butter, softened.
  • 3 c Powered Sugar
  • 1/4 c Milk.
  • 1/4 c Cocoa.
  • A dash of Salt.

How to:

To make the brownies:

  1. Preheat oven 350˚F. Spray 9×13 pan with Bakers Joy or other cooking spray. Set aside.
  2. Mix all the ingredients together and pour the batter into the prepared 9×13 pan.
  3. Place in oven and bake for 30-35 minutes.
  4. Once the cake is done, let it cool and prepare the icing.

To make the icing:

  1. Mix all the ingredients for the icing together with a mixer.
  2. Spread icing on brownies.
  3. Cut brownies and ENJOY! They are amazing!
