Greetings from the Stockyards

Since Tbug told us she’d never been to Ft. Worth, on our way home from Grandbury we had to run into Central Market {it’s a must}, then hubby asked me when I was a kid, where was an iconic place to Ft. Worth that we could take her to eat.

I looked at him and said, “The Stockyards.”  He wasn’t real sure my dad would want to drag the trailer down there or not so he’s like where’s another place?  Um… It’s Ft. Worth… there’s tons of places to eat….

So we got in the truck from Central Market and dad asked where we wanted to go eat?  I was like, um there are tons of places 🙂  So we kind of let Tbug pic.  We gave her options {Steak, Mexican, Italian, etc} and then we picked a restaurant based off her suggestions.

Guess where we went… the Stockyards!  She decided she wanted steak so we thought either Riscky’s Steakhouse or Cattlemen’s.

By the time we got to the Stockyards it was 11:25.  At 11:30 & sometime in the afternoon, they do daily cattle drives through the street.  Yup, we got there just in time for Tbug to experience that.

 

Then dad & hubs went to park the trailer and we decided upon Riscky’s Steakhouse for lunch.

As an add-on we ordered Calf Fries.  Do you know what those are?  Um… some call them Ozark Mountain Oysters, they’re also known as {sorry} Calf nuts.  Yes, you fry them up and eat them, a lot like livers & gizzards, etc.

Don’t worry, she knew what she was eating.  Well sort of.  And she’s had them before, and her auntie told her then what they were, so she knows 🙂  She likes them :).  I’m not a big fan but I ate one 🙂

After lunch we ran her around the stockyards a bit.  Yup, I even caught her with her eyes shut… Go me 🙂

I promise she isn’t standing in the middle of the road although it sure looks that way… This is where the train used to go through to load up shipments of cattle, etc.  Now they’ve turned some of the old holding pens into stores.

And she was so bad we had to throw her in jail.  Grandma said she was worth bailing out though… LOL 🙂

Once we left Ft. Worth we headed to Paul Taylor’s Saddle Company in Pilot Point.  When we took Squirty down, we missed getting there by 15 minutes so we hauled butt to get there this time.  We got slowed down a bit with the Texas Speed Way traffic, but otherwise we got there at 2:40.  Still not really enough time to take in all the store, but we got to see some.

 

Then we headed for home.  This is crossing over the Red River which is the boarder between Texas & Oklahoma.

 

And don’t worry, we stopped at JL’s for BBQ on the way home… I’m just sayin 🙂

Tbug’s Breakfast Casserole (With help from daddy)

At Easter time, we used a lot of eggs to make confetti eggs.  I refused to let the good ones (yes there were good and bad eggs we used, long story) go to waste.  So we started as we’d crack them separating X number into different bowls for different recipes.  We had a cake to bake and Mac & cheese to make which required some eggs, but we were still left with 12 eggs.  What do you do with 12 eggs?  Well obviously you make breakfast!

So here is what Mark and Tori concocted.

Breakfast Casserole ala M&T

2 Russet Potatoes, shredded
1/2 Medium White onion
1/2 lb sausage
3 Strips Thick cut bacon, fried just before Crispy, chopped.
12 Eggs {I might reduce this to 10 eggs}
2 Cups Cheese {Cheddar, Monterrey Jack, etc}

Preheat your oven to 350 degrees.
Shred 2 medium to large Russet Potatoes.

Squirty is Home

And if Squirty is home, that means, she’s gonna have a baby!  Yup!  Our Mare got bred!  Woopie!!

So we got the phone call on Easter Sunday that she passed the 24-day heartbeat check and all looked good.  They knew we were picking her up after that so they gave us a call so we could make plans {something I’m horrible at… lol}

So Friday sitting at work I ran across Chell’s blog post about Oklahoma’s expected weather over the weekend…

 

Oh my gosh, really?  We’re going to Texas.  I’m not sure if you’ve looked lately but to get to Texas from Missouri, the most direct route is through Oklahoma.  Oy!  Luckily We go down I-44 to Big Cabin and down 69 Hwy which takes you through McAlester, Durant, etc.  So we would be “bypassing” the terrible weather! Lab Owners…

It was probably a Lab who inspired the saying “A tired dog is a good dog.” Plan to teach your Lab tricks, and get him involved in dog sports if you don’t want to see just how much destruction he can do when he’s bored. The people-adoring Cocker Spaniel dislikes being left alone; Cockers who aren’t well socialized – and even some who are – can develop severe separation anxiety that takes the form of barking, whining and destructive behavior. In addition, his coat requires professional grooming or frequent care from a dedicated owner. The silky medium-length coat must be brushed several times a week and bathed and trimmed weekly. Even a Cocker with a short trim needs frequent brushing and bathing and trimming every couple of weeks. He is prone to ear infections, so weekly ear inspection and cleaning (if needed) are recommended. Many people rely on professional groomers every four to six weeks to keep their Cocker Spaniels looking the very best

Easter Dessert – Chocolate Peanut Butter Cup Cake

My husband absolutely LOVES Reese’s Peanut Butter Cups.  I swear if you could make a meal out of them, I’d almost venture to say he’d be in heaven.

I’m kind of at the opposite end of that spectrum… I’m not crazy about chocolate & peanut butter together.  Really I think peanut butter only belongs on toast or PB&J sandwiches.  I know, where’s my sense of adventure?!?!

Well the week before Easter I was perusing through Sweet Tooth blog and found a recipe for Chocolate Peanut Butter Cup Cake.  I knew that we had to have this, and yes I ate it.  My opinion… definitely NOT Bad!

Snookums Peace Offering – take 2

On Easter Sunday after lunch, I got into watching You Again while dad & Tbug went out to ride horses.  Then Hubby got up and walked outside himself.  Toward the end of the movie Hubs calls me and says, You should bring your camera and come out there.

I took my sweet time and grumbled and groaned a little bit… yeah I’m cool like that, but I went out to see this.

I guess hubby had been working for about 30 minutes to be able to get her to eat out of the bucket and let you pet her.  Remember, I got a head start feeding her out of my hand a couple weeks before :).  And then my dad had been working on getting her to eat horse treats.  So this obviously was the next step!

After I snapped a few photos Tbug was itchin to go back to riding so she jumped out of the pen and I crawled in.  After all my hard work, I wanted in on this!

With my right hand I could quietly get up to her ear… She wasn’t real sure about me, but she’d sort of allow it.

Then we’d have to kiss and make up…

And I’d have to coax her into eating out of the bucket again…

She wasn’t real crazy about my left hand touching her though…. I’m not sure why.

She’d let me, but she wouldn’t let me touch her ear like I could with my right hand.

And you can tell she’s getting a little annoyed here.

So I backed off and tried to kiss and make up again.

And she snorted/snotted at me here….

And I let her get a few more bites before she decided she was done with me.

So hubby came and started in a little more.

But, she kept coming back to me.  Oh yeah, she’s my girl!

But then I lost out to the feed, once again…

I think she started running out of feed around this point, because not long after this….

Oh how did that get in there?  I’m sorry!

She was done with us.

Although she’s a very funny, prissy horse.  She doesn’t like to get her feet dirty if at all possible.

And she let us know real fast we needed to get out of her pen.  So we crawled out of the fence.  I’d say my hubby looks pretty happy with his afternoon of work!

Btw, I still haven’t seen that movie all the way through… I’m just sayin…

Easter Take Two

**Yeah it’s picture heavy again…**

Easter morning started off with a visit from Mr. Easter Bunny.

It was hilarious because it was sitting on the love seat in the living room, she made mention about it and we asked her who it was for and she said, “I dunno.”  So I told her it was for me.  Then she said it was purple so I told her it was really for me, she disagreed with me then.

Then she tried to put it back in the basket.

Her next comment was, “What do I do with it now.”  She asked that because of the chocolate and we don’t want rodents so we keep it all in the kitchen, but I smarted off, “You put it in your mouth.”  And this is what I got.

Then we got up, while hubby and Tbug got dressed I whipped up some of my favorite icing for the cake so I could decorate it when we got to my parents house and then I got dressed and we ran out the door to church.

After church we went to my parents house and I iced the cake and then Tbug put the halved Reeces Mini’s around the top.

Mom wanted my Red Lobster Biscuit recipe, but I’d stumbled across a different one so we decided to try it.  Um… I think we’ll stick to the original, but they weren’t…. bad…..

And Grandma brought Spinach Artichoke Dip which was to die for!

I told her I want the recipe.  If she remembers to get it to me, I’ll be sure to share.

Mom’s Chinese Cabbage Salad.

Mom wanted “fancy” linen, aka paper towels so hubby decided to be a smart a$$ and he folded them all fancy.

Mom’s “good” dishes were in the dishwasher, she’s like do you mind if we use the every day dishes.  Heck none of us cared one bit as long as we got to eat :).

This cake was to die for.  It was a chocolate cake with chocolate chips, peanut butter icing between the layers and my butter cream on the outside.  Then Reece’s mini’s around the top.

And I’m not a huge chocolate and peanut butter together kinda gal.

Then we went to Sunday night dinner.  Hubs walked into Pokey & Earl’s with one of our confetti eggs and broke it right over Earl’s head. 

Then T came in and we tried to get him to take one and go throw it at one of the kids, but for some reason he wouldn’t do it.

So we took them all outside and hollered and the kids came a running.

The kids absolutely LOVED them.

Although they went a lot faster than it took to make them…

That’s for sure!

Then they went back to playing but the girls especially walked around with confetti in their hair all night.  It was great.
