PW’s Meatloaf

So I was reading Mrs. Mullen’s blog the other day and she was talking about how her husband did a thoughtful thing and made Pioneer Woman’s Meatloaf for her for dinner and thought, boy now that sounds good! A couple of Sundays ago I thought that sounds awfully good for dinner so we got the ingredients and I went to work.

2 lbs of hamburger

Parmesan Cheese

Milk soaked bread

All the seasonings/spices. Like my pepper grinder? I got it in NYC!!

some parsley. I didn’t have fresh so I used dried. Don’t sue me!

Look at my little eggy Whisk!

And get in there with your hands and mix it all together!

then plop it out on a broiler pan. Hey if you line your broiler pan with aluminum foil it saves a heck of a mess in clean up!

Then surround it with some good ole yummy bacon!

Then you make the red sauce which is ketchup, dried mustard, spicy sauce, and brown sugar. Well, I didn’t have spicy sauce or dried mustard so we used Dijon mustard 🙂

Mix it all up

and spread it on top. Yum!

now I wasn’t paying attn to my camera settings for this, hence the darkness of the shot :(… But you pull it out at 45 minutes

smother it in more red sauce

And bake for another 15 minutes

While all the baking was going on PC decided to take a nap. And don’t laugh at the photo frame in the corner, we don’t have wedding photos so we left the “pics” that came with the frames in it.

So for a side dish we made, as some call it, creamed corn

It’s just a can of corn and a half block of cream cheese warmed together and add a dash of pepper! Yum!

And here is what it looks like out of the oven.

And you have dinner! I should have put it on a smaller plate so it didn’t look so small 🙂
