How to Make Simple Syrup

Use equal parts granulated sugar to water. It is a 1:1 ratio.

Bring 1 cup of water to a boil. Add 1 cup sugar. Once the water comes to a boil, reduce to a simmer and allow the sugar to dissolve in the water. Place in a storage container in your refrigerator for up to 1 month, or use right away.

Rich Simple Syrup

This is a 2:1 ratio. 2 cups sugar to 1 cup water. This is used in the UK bars. In the US it is referred to as Rich Simple Syrup.

Uses for Simple Syrup

Sweeten cocktails, iced tea, iced coffee, lemonade, and other cold drinks.

It is also used on top of Cake layers to help keep them moist. Especially wedding cakes. Why? Because they are out in the open air for quite a while both while decorating and while cutting and eating.
