Happy Birthday Hubby!

Today is my dear darling husband’s birthday. I knew I wasn’t going to have an opportunity to bake his birthday cake with Abug this week, so over the weekend she and I made his cake. I decided on making a chocolate cake topped with a peanut butter buttercream icing and mini Reese’s pieces. The chocolate cake I decided to use was my grandma’s recipe. Abug and I made the cake, I put it into the oven, baked it off, and that’s when it all fell apart, literally.

I went to turn the cake out of the pan and only half came out. The other half stuck to the pan. Darn it. So what do you do? You make a birthday trifle for your husband. What? Yup. Cut the cake up into pieces, place some in, top with peanut butter buttercream, Mini Reese’s candies and then more cake, buttercream, and finish with the mini Reese’s. Bam, there you have it… a Birthday Peanut Butter Chocolate Cake Trifle.

Peanut Butter Chocolate Cake Trifle

Ingredients:

  • Chocolate cake, baked and cut into 1″ squares
  • Small pkg of Mini Reese’s Peanut Butter Cups
  • 1 Batch Peanut Butter Butter Cream (recipe follows)

Directions:

  1. Make sure to bake your cake of choice, then cut it into 1″ squares. My cake recipe made 2 9″ Cakes. Place 1/4 of the cake pieces in the bottom of a trifle dish. Top with one 1/4 of the buttercream icing. Finally, add a handful or so of the Mini Reese’s Peanut Butter Cups, about 1/4 of them.
  2. Repeat step 1 three more times topping off with the Mini Reese’s Peanut Butter Cups.
  3. Place a candle on top if you’re feeling froggy.

Peanut Butter Butter Cream Icing

Ingredients

  • 1 cup (2 sticks) salted butter, softened
  • 3/4 cup Peanut Butter
  • 3 cups Powdered Sugar
  • 1 tsp Vanilla
  • 3-4 tbsp Milk

Directions:

  1. Cream your butter with an electric mixer.
  2. Add the peanut butter, mix well.
  3. Next, add vanilla and milk.
  4. Finally, add Powdered sugar.

Note: Use more milk if need to thin out to thin consistency for spreading if using on a cake to actually decorate a cake. It’s better a little stiffer for the trifle.
