Spicy Sausage Pasta

I’m fairly certain I knew what smoked sausage tasted like, but I’m not going to lie, I’ve never bought it.  Usually it was at a potluck when someone brought cheese, crackers and smoked sausage.  So back when we did the Poulet Tchoupitoulas and I was wandering around the store, I had the hardest time finding it.  But now that we’ve used it, I’m hooked.

One day a few weeks ago I was reading Kevin & Amanda blog and she made Spicy Sausage Pasta.  I thought it sounded interesting.  I knew what ingredients we had at the house, which was all of them – score!  So I went home that night planning to make it.  Well silly me didn’t tell hubby and he already worked on making the Pork Sliders we had.  Oh well it happens, and I have a wonderful husband who cooks for me.  I’m not going to complain!

So later that weekend we were looking for something for lunch when I looked at him and said, I know what we’re having!  And to beat it, you can’t top a 1 pot wonder.

Did you read/see that?  Yes, I said 1 pot wonder.  I made all of this in 1 pot!  Score!

First, Dice up your sausage.

Next add the olive oil to your skillet.

Then add your sausage (1lb) & onions (1.5 cups) to the hot oil.

Cook the sausage & onions until lightly browned.  Don’t forget to add the garlic (2 cloves minced) here!  Cook for about 30 more seconds.

Ok I was wrong, I had most all the ingredients.  It called for rotel, I had fire-roasted Tex Mex tomatoes.  I was a rebel.  I used them!  (1 can.)  Don’t even drain them!

Add your Chicken Broth (2 cups).

and a half cup heavy cream.

Then just before you put the lid on, dump in your pasta, bring it up to a boil and then simmer {once you place the lid on once it comes to a boil}.  I used egg noodles, but you can use penne or any short cut pasta you’d like. (8 oz) .  Boil for the amount of time it takes to cook your noodles.

Now mix in 1/2 cup Monterrey Jack cheese.  Then top with more cheese.  At this point you broil it until golden brown and cheesy, but my oven was being used for something else that day so we just mixed all the cheese in and called it good.
