Easy Homemade Cream of Chicken Soup

I woke up this morning with a headache and it hasn’t gone away. In fact it’s gotten worse and my eyes feel dry. Not a good combination!

Anyway, the other day Abug and I were getting caught up on DVR’ed shows and we were watching Trisha’s Southern Kitchen. I have NO idea what she was making but she was talking about a crockpot meal and how great they are for all day long slow cooking, etc. Then I got to thinking that we had some Chicken we needed to use and boy wouldn’t that cream cheese crockpot chicken I make be good. So I went in and started digging through the cabinets looking for “Cream of Something” soup. Darn, we didn’t have any.

Hubby and I were texting during this process and he told me to make some so I went out on the internet and found a recipe. Wow, did you know how easy it is to make your own cream of chicken soup? I’ve made cream of mushroom before and it was really good, but I didn’t realize cream of chicken was just as easy if not easier. seriously!

Seriously, it’s as easy as like 1-2-3….

I got this really cool whisk for Christmas. I picked it out at Williams Sonoma and this is the first time I got to use it! I was so excited. Oh and don’t you have a sand pail in your kitchen? Be jealous if you don’t! :).

Homemade Cream of Chicken Soup (Pinch of Yum)
Ingredients:
2 1/2 cups chicken broth
1 1/2 cups milk
3/4 cups flour
1 tbsp seasoning mix (use what you like, the possibilities are endless. I went with 1/2 tsp onion powder, 1/2 tsp garlic powder, salt and pepper, and a Rachael Ray Chicken seasoning grinder mix)

1. On medium to medium low heat bring the chicken broth and 1/2 cup milk to a low boil.
2. While that’s happening, in a mixing bowl, mix the flour and the remaining milk until a smooth mixture forms. Add seasonings.
3. Pour the flour mixture into the sauce pan over low heat and stir continuously for 5-10 minutes or until mixture is smooth and thick. As it cools it will thicken even more.

And that’s it. Like I said, 1-2-3. Then I added it to my crock pot with seasonings for the chicken and the chicken and let the crockpot do it’s thing. I may or may not have sent hubby pictures throughout the day to be mean ;).
