Hubs BBQ Sauce

On more than one occasion hubby has wanted BBQ sauce.  Now of course, we have some store bought usually on hand, but he still adds his own touch to it.  And on some occasions we’re in more of a hurry to eat/use it than others, so I got the brilliant idea {yeah they hit me every so often}, let’s make some ahead, can it and then we always have it on hand.  You know, for those times we don’t have time.  Sometimes time is our enemy.  Wonder how many more times I can say time in this particular paragraph….

Moving on.  One thing about it though, his bbq sauce is never the same twice.  So he looked at me like I’d flipped my rocker when I mentioned it, but then he said, hmmm you have a good point.  So one evening while we were killing time after work before we could pick Tbug up, we went to the store and milled around for a bit looking for just the right ingredients.  Then we were doing conversions while we were at it, because remember we usually only make just enough for whatever we’re doing.

Finally we left the store, picked Tbug up and headed for home.  Next came the process of hubby trying to make the bbq sauce, Tbug helping and me getting in the way taking pictures.  But I just had to document it, for him and for all of you.  Duh :).

So, without further ado, Hubby’s BBQ sauce.

Note:  We used a 16 quart stock pot for this and it was fairly full when we got started as you can see.  Of course as it simmers it will reduce some.

Hubby’s BBQ Sauce:
1 1/2 cups oj

1 full large can of 100% Tomato Juice

3-64oz bottles of Ketchup (plus just enough water loosen what’s left in the bottles)

12 oz bottle of spicy mustard (plus just enough water to loosen what’s left in the bottle)

1/2 of a 32 oz jar (therefore 16 oz) of yellow mustard

About 9 oz of Worcestershire Sauce

8oz Fat Free Italian Dressing

Doesn’t it look pretty!

28 oz Honey BBQ Sauce (Plus enough water to loosen what’s left)

1 cup onion flakes

1 1/2 cup brown sugar

1/4 cup onion powder

1/4 cup garlic salt

6 cloves minced garlic
Plus a secret ingredient, but you don’t have to use it because, well, it’s been discontinued.  (He doesn’t always use it anyway so no big deal)
3 tsp ground black pepper

Let it simmer for 2-4 hrs.  I think this when it was all said and done simmered about 3 1/2 hrs.

Then, can it :).  Yum!
