3-2-1 Blastoff…. errr I mean Cake

At our PEO meetings, we have a host (opens her home up for the meeting and supplies plates/cups, etc for dessert) and a Co-hostess (supplies the food for the end of the meeting).  A meeting I just so happened to miss, they had what they called 3-2-1 desserts.  I thought, what the heck is that?

OMG, what rock was I living under?  It’s the easiest, most simplest (yes it shouldn’t be most simplest) recipe ever.

3-2-1 Cake  (3 tbs. mix-2 tbs. water, 1 min. in the microwave)
Ingredients: 1 packaged angel food cake mix and 1 regular cake mix, flavor of your choice.
                                2 tbs. water

Directions:   Place both mixes in a 1 gal. zipper bag and mix thoroughly.  Be sure to break up any lumps.

To make a single serving, mix 3 tbs. of the zipper bag with 2 tbs. of water in a microwave safe coffee cup or mug.

Due to the angel food mix this will bubble and become frothy.  Place in microwave for 1 minute.

Obviously we chose a chocolate cake mix.  We served ours with ice cream.  My PEO friend though, she did a lemon cake mix and for a glaze used some Splenda Powdered Sugar with some lemon juice.

This is perfect for the kiddo’s.  As long as they can count, they can make cake :).  And it’s super easy to keep on hand and make in the blink of an eye.  Enjoy!
