What can I say… um… nothing but THESE. ARE. GOOD.  Run to the store, snag up the ingredients you don’t already have, and make these immediately.  Now I’ll also warn you… You may eat the whole pan yourself and if that’s the case… you should wear some sweat pants or something that has an elastic waistband.  It will make you feel better 🙂

Btw, I’ve made them twice now (you know before this post posted).  The second Tbug asked why I wasn’t taking photos… LOL.  Does that mean I take to many photos of making food?  Just a side thought there.

Buttermilk Brownies

Ingredients
1 stick margarine
1 cup water
1/4 cup cocoa
1/2 cup liquid shortening
2 cups flour
1 tsp vanilla
2 cups sugar
1/2 tsp salt
1/2 cup buttermilk
2 eggs
1 tsp baking soda

Directions
Combine margarine, water, cocoa, liquid vegetable oil in a saucepan.  Stir and bring to a boil, it will thicken.

Then dry ingredients are put into mixing bowl and pour hot mixture over the dry ingredients.  Blend well.

Then add buttermilk, eggs, soda, and vanilla to mixture.

Blend well and pour into 11×16 inch pan sprayed with pam.  Bake 10-20 minutes at 350 degrees.

Check with toothpick, remove from oven when a toothpick comes out clean.

Icing:
1 stick margarine
1/4 cup cocoa
1/2 cup buttermilk
3 cups powdered sugar or more
Dash salt
1 tsp vanilla

Cook Margarine, cocoa, buttermilk, bring to a boil.

Slowly stir in powdered sugar, vanilla, and salt.

Stir until smooth. (but for some reason mine always comes out lumpy no matter how long I sit there and stir it…Oh well, it’s still good!)

Put the icing on the brownies and enjoy!

  1. How have I never thought to use buttermilk for brownies?! Here, I've been using skim. Calorically, brownies are not the time to skimp, Kelly.

  2. Nicole I am making these with peanut butter, which is what I use for shortening in brownies. I was surprised to see margarine instead of butter – and you use the really bad kind. Margarine is worse than butter on the arteries, I am sure you know. Brownies lend themselves to the peanut butter substitution really well.
