Hominy + Bacon + Cheese = GOOD!

Have you ever heard of Hominy?  If not, go here… It’ll tell you all about it 🙂 I’ll wait..

Ok now that we are all on the same page… Those of you who knew what it was, have you tried it?

Seems like there are those out there who like it and of course those who don’t, just like with every food really.  I personally like it.  In fact, I don’t like beans and my dad isn’t crazy about beans in chili so when I was a kid we replaced the beans with hominy.

Well now, let’s make them the main feature!  The Star of the show!  The Bell of the Ball!  The Life of the Party!

Hominy Casserole

1 cup chopped onion, sauteed
4-15 oz cans white hominy (drained but reserve 1/2 cup liquid)
1/2 cup hominy liquid
1 tbsp juice from pickled jalapenos
1/2 pound cheddar cheese, grated
10 slices bacon, fried crisp and chopped
1 cup chopped green chiles
1-2 pickled jalapenos seeded and chopped

Cook up your bacon in a skillet.  Reserve some of the bacon grease for later.  (you won’t need all of it, so definitely drain some off, 10 pieces of bacon creates a lot of grease!)

Dice up your onion.

Go ahead and also open your cans of hominy.

Heat the hominy in a separate sauce pan until heated thoroughly, use a little bacon grease.  You need half a cup of the liquid so I went ahead and just dumped 3 of the 4 cans of hominy in with their liquid and drained the 4th can.  That way the liquid was warmed too.

 Saute the onions in the reserved bacon grease.

Chop your crisp bacon.

Once your onions are sauteed up, add in your green chilies.  I just used a small can.

Add the 1/2 cup hominy liquid and bring back to high temperature

Add in your hominy.

Stir it all together to evenly distribute everything.

 Add half of the bacon to the onions.

and half of the cheese.  Stir until cheese melts.

Add 1 tbsp of the pickled Jalapeno Juice.

And a couple diced up pickled Jalapeno’s.

Pour into a 9×13 pan coated with Pam (or leave in a cast iron skillet).  Add the remaining bacon

and cheese.

Bake at 325 degrees F (162.78 degrees C… so do you round up to 163 or round down to 162??) until the cheese melts and gets bubbly, approx 40 minutes.

Saute the onions in a little of the bacon grease.  Heat the hominy in a separate sauce pan until heated thoroughly, use a little bacon grease.  Add the green chilies, the hominy liquid and bring back to high temperature, add the hominy and half of the cheese.  Stir until cheese melts.  Add the pickled jalapeno juice and the diced pickled jalapeno’s and stir again.  Add half of the bacon and onions.  Pour into a 9×13 pan coated with Pam (or a cast iron skillet).  Add the remaining cheese, bacon, peppers and onions.  Bake at 325 degrees F until the cheese melts and gets bubbly, approx 40 minutes.

It's one in the morning, and I should be going to bed, but instead I'm looking at your delicious food and my stomach is grumbling – because, well, there's NOTHING better than bacon – it's totally one of my favorite, favorite foods!
