Spaghetti & Meatball Stoup

I can’t help it.  She rocks!  I do have to laugh though, when she talks to her food…. but hey I guess we all do things like that… I mean you know I was born last night but it wasn’t at night…. (if that doesn’t make sense, look at yesterday’s post, I even gave you a link to get there easily!!)

One of the things she makes is called a Stoup.  What exactly is a Stoup you ask?  It is thicker than a soup but thinner than a stew… hence…. Stoup.

She had this recipe up, oh goodness, a couple years ago, because I can remember downloading it with my mom’s dial up internet on her computer.  Yeah it’s a little old… LOL.

Anyway last night felt like a soup night.  At first hubby wanted chicken noodle but we really didn’t have all the ingredients for that so I offered this one up.  Well again, I didn’t have all the ingredients so I improvised.  I’ve had her exact recipe, extremely good, however my improvised stoup was very good too!!!

So without further ado, here is my version of her recipe (if you want her recipe, click up  on recipe up 2 paragraphs up) 🙂

Spaghetti & Meatball Stoup 
(Nicole style…LOL)
Ingredients:
2tbsp extra virgin Olive Oil (I was out so I used vegetable oil… LOL)
1 medium onion, diced
3 cloves garlic, minced
2 (10oz) cans tomato soup
1/2 can  Tomato paste (the small can)
3 cups Chicken stock
1 lb ground beef
1/2 cup grated Parmesan cheese
1/2 cup bread crumbs
seasonings (I went with garlic & pepper)
1 large egg
2 tbsp (or palm full whatever) dried parsley
Spaghetti noodles
Directions:

Saute up the onions and garlic, about 5 minutes.  Add tomato soup and tomato paste, stir until tomato paste is combined with the soup.  Then add your chicken stock.

Let that come to a slight boil, I had mine over medium heat.

Then in a bowl mix the hamburger, Parmesan cheese, bread crumbs, seasonings, egg & parsley. 

Once mixed then form meatballs.  Her recipe says 1- 1 1/2″, I think mine were a little bigger than that…  Just eyeball it.

Once the meatballs are formed you can drop them into your soup.

Then cook your spaghetti noodles.  You can cook it right in the stoup if you’ll be serving it immediately, or if your family will come and go boil your noodles in a separate pot. 

If you boiled in a separate pot (for the coming and going family), place noodles down in your bowl then top with the soup and mix in.  If you boiled your noodles in your pot, allow them to cook in the soup the allotted cooking time for al dente (about 10 minutes).

To serve it up, dish into your bowl and top with Parmesan cheese.  Now comes the big debate… do you eat it with a spoon or a fork?  Maybe this is where the hand Spork would come into play….

  1. Ha. I do not like Rachel Ray! Not even a little bit! While I think she is sweet, I really find her personality as overpowering.

    Also – while I realize that she gives people who can't cook easy, stress free meals – I cannot stand most of her recipes! Maybe its because I cook fresh and from scratch a lot?

    Or because I'm a mean and difficult person 🙂

  2. I think Rachel Ray's like Barney the dinosaur. People either love her or hate her.

    She makes easy recipes, has SUPER cute kitchen products, etc. but a friend of mine did an internship at her morning show and said she was an uber-mega beeyotch in real life – so I don't watch her anymore. LOL
