Easy Cowboy Caviar

This time I used Texmex Tomatoes that I found at Wal-mart – generic brand

I unfortunately didn’t have my usual Mexican corn so I used regular

And added a tbsp of green chiles

I used a mixture of Colby Jack and Monterrey this time I think, but use the combo you like!

Last weekend we got home from Branson just a couple hours before we were heading to Sunday Night Dinner.  Now one thing about hubs, he loves corn… So I thought I’d make him one of my favorite easy go to recipes.

My dad sent this to me one time in an email.  It’s super easy and simple.  I had to deviate a bit b/c I didn’t have some of the exact ingredients, but I’ve always heard that’s the sign of a good cook, be able to substitute and make it taste just great :).

Cowboy Caviar
2-3 Cups Shredded Cheese
1 Can Rotel
2 cans Mexican Corn (drained)
1 Cup Sour Cream
1 Cup Real Mayo
1 Bunch green onions (chopped)

Mix together, eat with chips.  Enjoy.

tip: It’s so much better if it sits and chillaxes over night.
