Tortilla Rollups

Warning:  These. Are. Addictive.  Even when you are making them.  Just to let you know, you’ve been WARNED!

Ok anyway moving on…

I will neither claim nor deny that those ends (that you cut off b/c they really don’t have filling and won’t hold shape)… I ate those.  Not all of them, mind you…  That may or may not have been my dinner also.  I had other troubling problems going on at my house that night… in the forms of we need rain… we’re on well water… and for some reason I guess our pump stirred up mud as we were pumping water into the pool and turned our pool was a lovely shade of muddy water while all the faucets in my house gave us muddy water.  It was a lovely night.  Especially because we were having a 4th of July Party the next night.  Thank goodness for bottled water and loving family!

I am pleased to announce that since then, our water has cleared up and is safe to drink again!  In case you were worried.  The pool on Saturday though, for our party… looked like swimming in a muddy pond… YUCK!  It too has cleared up and now I have to vacuum the pool!

Tortilla Rollups

8 oz sour cream
8 oz cream cheese
8 oz shredded cheddar cheese
garlic powder to taste (1/2tsp)
Black olives
1/2 cup chopped green onions
Tortilla shells
(Disclaimer:  No ingredients shots… it was about 9pm when I started these, I was tired and forgetful, luckily the handy iPhone was sitting there on the counter and you get what photos you get :))

Mix all ingredients until creamy.

Spread on tortillas and roll up.

Cut into 1″ slices.

Chill.  Serve with Salsa to dip.
