PD's Chocolate Gooey Butter Cookies

So did anyone else lose yesterday’s post?  Makes me really sad!

Hopefully it shows back up.

So anyway there is a Mennonite Store or maybe an Amish store right around the corner from my house.  I’m not really sure which one they are.  Anyway they have some of the best foods there.  You can buy fresh produce, seasonal flowers, chips, baking products, baked goods (that are usually still warm out of the oven), cookbooks, fresh cheeses, milk, beef, you name it, they might have it.  It’s super awesome!

Well one of our favorite things is to go there on Saturday’s and get one of their fresh made sandwiches.  YUM!  You choose 1 meat, 1 cheese, your bread and your condiments.  Now the first time we did this we thought… one meat… ok so that’s not one slice of meat, no that’s just one type.  This sandwich is huge!  You don’t need or want anything else, you’re stuffed just eating that sandwich!

They also make these wonderful cookies!  Oh. My. Gosh. are they excellent!

So at Christmas time I’m signed up for Food Network’s 12 Days of Cookies.  This last December one of the cookies offered were Paula Deen’s Chocolate Gooey Butter Cookies.  I sent the recipe to hubby and had him read over it and then we actually tried them.  I swear they are almost identical to the ones we get at the Amish/Mennonite Store.  I thought I’d share this recipe with you.  Oh. My. Goodness.!  Delicious!

Paula Deen’s Chocolate Gooey Butter Cookies

Servings: 2 dozen cookies
Prep Time: 10 min
Cook Time: 15 min
Difficulty: Easy

Ingredients 

1 teaspoon vanilla extract
Confectioner’s sugar, for dusting
1   (18 ounce) box moist chocolate cake mix
1   (8-ounce) brick cream cheese, room temperature
1   egg
1   stick of butter, room temperature

Directions

Preheat oven to 350 degrees F. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and gooey. Cool completely and sprinkle with more confectioners’ sugar, if desired.

In fact the last time I made them (before we started losing weight obviously) I only made a handful and then froze the batter.  Hey it’s just as good to pull them out, bake them on the spot and have warm cookies in 12 minutes!
