3-2-1 Cake Mix and Cake

This weekend was special. It is our annual Trails for Kids fundraiser. If you have been here anytime at all… you know that usually, we have this ride in April. Also… this year has been “interesting” (to say the least!) so we had to postpone until this past weekend. All summer long we wondered if it would even happen. I mean seriously…

But the time came and it did, in fact, happen! I can’t give away any of the details on the ride just yet but know, it was a MAJOR success! That would be an understatement!

On Friday night of our fundraiser, we have a bake sale. A few years ago I had a chocolate chip cookie in a cast-iron skillet go for $130. Well, this year I had something go for more than that… but that’s another story for another time :). Yup, I’m mean.

Today I want to share a recipe I’ve shared before… BUT… the cool thing is this is perfect for camping. And since this fundraiser involves camping, what better time to share, am I right?

3-2-1 Cake Mix & Cake

Ingredients for Cake Mix Setup:

  • A box of Angel Food Cake mix
  • A box of your favorite flavor of cake (chocolate, funfetti, lemon, you name it!)
  • A ziplock bag

I also had an airtight container that I used for the auction… but keeping the mix in a ziplock bag works just great. Since I had my container though, I used it to help hold open/up my ziplock bag.

Dump both cake mixes into the ziplock bag.

Seal the ziplock bag…

And then shake. Dance to your favorite song. Do whatever you can and have to do to make sure this cake mix gets thoroughly mixed together!

You do not want to be able to tell your cake mix from the other cake mix. 

Here is where I poured it into the airtight container. As I mentioned, you can keep it in the ziplock bag too. That is an airtight container.

Ingredients for 3-2-1 Cake

  • 3-2-1 cake mix
  • Water
  • Coffee mug
  • tablespoon
  • microwave

Directions to make 3-2-1 Cake

Into your coffee mug place 3 tablespoons of the cake mix. Add 2 tablespoons of water.

Mix well.

Place in microwave for 1 minute (I’ve learned that if my microwave is cold, I do about 10-15 seconds over that just to be sure, but you don’t want to overcook… makes it tough).

And you have cake. 

Now top it with icing or in my case, ice cream, because go big or go home… am I right?

See, this is the perfect cake for camping. I guess that’s camper camping… If you are tent camping you might not have access to a microwave. But still… easy peasy!

Drum roll, please…

For this, I had the cake mix in an airtight container. I bought a cute fall coffee mug & a spoon measuring set (1/4 tsp, 1/2tsp, tsp, tbsp) to go with it. It sold for….$45. Can’t beat that with a stick!
