Italian Grill on Broadway {Paducah, Kentucky}

Once upon a time, my friends and I took a trip to Metropolis, Illinois, to go SCUBA diving at Mermet Springs. When we were finished one night, we were hungry, so we googled restaurants around after deciding upon Italian and came up with the Italian Grill on Broadway in Paducah, Kentucky, just across the Ohio River.

We loaded up in our vehicles, made the 8 or so mile trek, dropped one of our party members off to go get us a table, and proceeded to find a place to park. We weren’t having luck finding a place to park and then got a phone call from Mark (who was the lucky sole dropped off) that there was a 4-hour wait. Man do we know how to pick restaurants or what?!?!

Rib Crib {Joplin, MO}

One restaurant that seems to get forgotten in my opinion in Joplin is the Rib Crib. It is on 26th street behind a Braums and a KFC I think. Heck, I don’t even pay enough attention to know what is around them. One day Mark and I were trying to find something for lunch and happened to think, what about Rib Crib, so that’s where we went. OMG, I’m so glad we did. (there’s a reason I’m overweight… LOL).

So I went with the Philly Griller. Mark wished he’d have gotten what I did… YUM! So it’s like Pennsylvania meets Texas. Chopped brisket with mild BBQ sauce, green bell peppers, caramelized onions, and Cheddar, on Grilled Texas toast. I could have eaten two although I was full with one and I really don’t need 2. Then I got a side of Onion Rings. They were the big rings that were nicely battered. Definitely would get this again!

Rancho Grande {Carthage, MO}

A week ago or so when I posted about our meal at Maria’s, that night I really felt like Beef Nachos. Those Beef Nachos at Maria’s are awesome!

Mark got home from work and we were discussing dinner. I mentioned those nachos and we decided to go to Rancho Grande in Carthage. We haven’t been there for a while so it was time to revisit it. We started with Chips and salsa like most Mexican restaurants and ordered a small cup of Queso.

Can you guess what I got? If you guessed Rice and Beans you’d be correct. Oh, wait no I don’t eat any beans but green. Okay okay, so I ordered Beef Nachos. Now their beef nachos are different, different restaurant :). They were good. I have to say I think I like a good Cheddar on Beef Nachos a little better, but there were enough here for leftovers and I ate them a couple of days later for lunch. Yum.

Recipe: Frrrozen Hot Chocolate

This weather lately has been crazy. One day it’s so hot you can’t stand it, the next it’s cloudy and nice. Then it’s sunny and nice and then it’s cloudy and hot. I’m so confused. I think my cough is too. I’m not sick but I can’t get this dadgum cough to go away. I’ve had it for almost a month. A few years ago someone made me take a shot of whiskey and it cleared it up. I’m almost that desperate right now. I must also admit that shot knocked me on my butt and I slept for 10 hours straight. #lightweight

Anyway, with the thought that fall is coming, but it is still in fact summer, why not enjoy a fun treat right now… one that makes you think of fall but really screams summer. What is this treat you ask? Well a Frrrozen Hot Chocolate, duh! Um… that might be an oxymoron but it’s oh so good you can just easily overlook that fact!

Spurs and Pearls Western Show Apparel

Oh gosh people, have you heard of Spurs and Pearls Western Show Apparel? Just look at this show jacket! If you show Western pleasure horses, this would so turn the head of the judge. Okay so the horse has to turn the head also, but come on people, when you show, you work on making yourself presentable as well!

The attention to detail is just outstanding. The flowers (is that what you’d call them) stand out with all the hand beading that has been added.

Stables Casino Restaurant {Miami, OK}

If there’s one thing I’m not crazy about, it’s seafood. That being said, my family and most of my friends love it. For almost a month my mom was talking about wanting Crab Legs. Dad happened to see that stables Casino had a Crab Leg Night on a Wednesday for $19.99 all you can eat + sides and a soup or salad so they asked if we wanted to go eat with them.

I’m pretty sure Mark’s response was is the Pope whatever nationality he is? That meant yes, we’re going. We started off with bread. The Italian bread is excellent. I’m a carb lover sadly….

Random Friday Thoughts

Hi. Did you miss me? Did you notice I haven’t blogged since Monday? I read more than once that you’re not supposed to draw attention to the fact that you haven’t been blogging. So I just broke one blogging rule, although I’m not sure it’s a set in stone type rule.

Did you know I started another blog? Be sure to follow along if you’d like. It is going in a bit of a different direction than this one. I would love if you’d follow me there too. If not, I won’t judge, I promise. (Paved Dirt Roads)

I graduated in May. This economy has been rough for me to find a job. Maybe it’s because I live in the part of the country I do, I’m not sure but I’ve gotten interviews but no jobs and a lot of thanks but no thanks type letters. Sigh! It’s kind of frustrating and makes me just want to throw up the surrender towel. I won’t, I just keep applying. I do have to giggle though… I’ve signed up through all kinds of job websites stating I have a Master’s Degree in English, a Bachelor’s degree in Agriculture, and they send me emails telling me to apply for a position that requires a CDL or being a diesel Mechanic.

Um… I don’t have my CDL and I’m not a certified diesel mechanic. I can change the tire on a car or check the oil for you if you’d like… that’s about the experience I have on being a diesel mechanic. I get a good giggle every day when I check my emails and they say, we have the job for your qualifications, apply for this diesel mechanics job.
