Smoked Ribs – SND Special

If there is one thing hubby likes to do, it is using his smoker to cook smoke meat.

The marinade is: Cabelas Garlic Marinade that has been discontinued.  Not sure what we’ll use when we run out.  Hubby bought a ton of it a few years ago (before we were together) when he found out it was going to be discontinued.

We had both Beef and Pork ribs in the marinade. (more…)

Sunday Night Dinner Photo Heavy!

If you happen to be any type of hunter, you’ll know that it is Turkey season.  Hubby, Pokey, TB and Mr. T got up at some unheard of hour (5am) and went out to the wilderness to find a turkey.  They didn’t have any luck though.  I woke up at 8am and I didn’t quite feel right.  They had to take Pokey back to his house and then TB, Mr. T and hubby came to our house to see if they could rustle up some turkeys.  Long story short, no turkeys were found and hubby stayed with me.  Then Mr. T and TB took hubby’s truck back to Pokey and Earl’s house.

This weeks theme for SND was Smoked Ribs plus sides.  Earl brought the ribs to our house, but hubby had plans to meet the boys at Earl’s and target practice, so hubby decided to take the smoker to Earl’s.  Since Mr. T took the truck and my car won’t haul the smoker, this is what hubby came up with…

Since I didn’t feel so hot earlier in the morning Hubby and Earl wouldn’t allow me to do much… lol… so when I left, I found Rio hanging out in the yard I should have been mowing.

When I got over to Earl & Pokey’s, hubby was taking the ribs out to smokeSND had to be a bit earlier this week than normal because they had a birthday party to go to later in the evening, so hubby had to get the ribs on earlier than normal.

Earl and I helped carry ribs out to the smoker, then while I was standing out there I found confetti from last year (read that a year ago) Easter when we made confetti Eggs.  I thought that was funny.  Sorry Earl and Pokey!  Wonder if that stuff will be there in 10 years??

Earl and Pokey’s BBQ grill went to pot, so TB brought the loader up to take it away with and then hubby and the kiddo’s jumped on the four wheeler and went down to help unload it.  Boy, the kiddo’s loved that four wheeler.  When hubby then got off to check on the ribs, Moo kept asking me to take them on a ride.

I decided this must be a lazy day for everyone, because not only did I not feel well, but Pokey got a headache and went in the house and laid on the couch while watching the 1st season of Duck Dynasty.  While I was standing outside with hubby again checking on the ribs, I noticed the piggies had the same idea.  But it totally cracked me up that one was sleeping in the feed trough.  I guess you can call it a lot of things, but late for dinner is not one of them!

After hubby got a good fire going with the ribs, he, TB and Mr T went down to shoot.  Later JT & AL showed up.  AL came in the house but eventually wound up down at the shoot practice.  Then when I got down there they were just cleaning up.  No, shooting practice for me, oh well, I was shooting my camera anyway 🙂

One thing we can down on a SND is Sweet Tea!

I decided to make Mozzarella sticks for SND.  While I was sitting at the table breading my cheese, Miss Tude brought me a flower.  Sweet right!?!?  Now keep in mind, she’s 3 years old.  We were talking about where her daddy was (Mr. T) and she said he was down shooting the boys.  I was like, you mean he’s shooting with the boys.  She was just positive that he was “Shooting the boys”.

A cute thing about drinks.  I wound up having to run back home for stuff to make my cheesesticks and while I was there I grabbed myself a cup of Cherry Limeade.  When I got back to Earl’s she asked if I liked Iced coffee.  I told her I wasn’t sure so she poured me a cup, so I had 2 drinks sitting in front of me.  Miss Tude was talking to me the whole time I was breading the cheese and she looked at me and said:

Miss Tude: You have 2 drinks?
Me: Yes.
Miss Tude: Did your mom say you could have 2 drinks?
Me: (containing giggles) My mom doesn’t know I have 2 drinks.
Miss Tude: Did you get that one drink from your mom’s house?
Me: No, I don’t live with my mom.  I got it from my house.
Miss Tude: Who do you live with?
Me: I live with my husband.  You know, the guy you were riding the four wheeler with?  He’s my husband and I live with him.
Miss Tude: Oh you live with him because he’s so cute?

We told Mr. T about this conversation and he was fairly certain he might need to have a talk with Miss Tude about boys… lol 🙂

AL brought baked beans.

Earl made a Hash Brown Casserole with her Gluten Free Cream of Mushroom soup so it was Moo & AL friendly.  Soooo good.  I may or may not have had 3 servings.  Hey don’t judge, they were only serving spoon size!!

The ribs.  We had Beef & Pork.

Niah & Jay brought Hawaiian Rolls.  We definitely had to break out the Strawberry Jam that Moo made.  Yum!

So after dinner I spotted one of the little piglets running around the yard.  I ran out to snap a few shots.  Eventually the curious thing walked up to me and about the time I snapped the picture he touched my foot and I jumped which scared him.  We scared each other… lol.

It was such a gorgeous day!  The high was 69 so none of us wanted to really stay in doors.  Waldy was swinging and Little butt kept getting in his way so she could play in the mud.  I pointed at the other swing and told her to play in the mud under it.  Next thing I knew, she decided to “swing”.

Then we had a pig chase on our hands.  Pokey had been moving the piglets into a different pen, but couldn’t catch the one I snapped a photo of earlier in the day so Diver Girl, TB and Waldy decided to catch the pig for Pokey.  They finally got the piglet caught and put into the right pen.

Next they got the bows out for some practice with that.  Just as Jay and Niah went to leave, they talked Jay into trying.  He’d never shot a bow before and hot dawg, we decided he was born to shoot a bow.  Then they were teaching Niah.  They even tried to “tempt” baby D.

Ok how cool is this shot of all 4 boys lined up to shoot!  Seriously!  And once they shot, then they had to go gather their arrows.

Toward the end, we even had Earl shooting hers.

About the time that Earl & Pokey and the kids needed to be heading to their Birthday party, hubby loaded the four wheeler in the truck to take back home.  TB was so shocked that hubby loaded it backwards.

And a few more random shots throughout the day:

1.  Miss Tude holding Moo’s cup for her.
2.  Zebra Girl was hiding from the camera so I made it a point to get her picture.
3. Miss Tude was helping Earl by pulling the “weeds” out of the ground.
4. Waldy was playing with the remote control car and running it under everyone’s feet 🙂
5.  Little butt was giving the puppy kisses. (she’s 2)
6.  Earl had all her girls.
7.  Yum! Chocolate covered strawberries!!
8.  I was told I look flat out mean in this photo 🙁
9.  Early and Nicole 🙂

My butt cheeks are sweating {Thank You Revolt Now Fitness} and an update

I tell ya, Revolt Now Fitness will make your butt cheeks even sweat!

I just finished my week one workout of the second 6 week session.  So if you’re good at math, that means we’re on week 7.

Now I must admit, this week hasn’t been the best for me.  As I mentioned earlier this week, my grandma fell at her house and fractured her Tibia and Fibula and had to have surgery on Tuesday.  Surgery went just fine and she was released from the hospital on Thursday.  She went to stay with my great-aunt since her house is handicapped accessible.  The doctor said she’d be out for about 6-8 for recovery but her therapy was doing just fine so they released her from the hospital.

Because of the surgery, I didn’t get my workout in on Tuesday night.  That may not be much of an excuse, but I went to see her after work at the hospital.  My husband is a rockstar and so are his bosses.  They allowed him to work from the hospital so that for sure someone was there during the surgery.  My dad’s job sent him to Alabama on Monday afternoon and my mom was getting ready to head for Atlanta.  We weren’t sure if my uncle would be able to get off so hubby made sure someone was there. Had his job not allowed him I’d have figured out a way to take off but hubby and his bosses are rockstars in my opinion!  My uncle was there too.

ignore my demon eyes please!

Anyway I’m not going to lie, I missed my workout.  Who the heck would have thought I would say that about a workout program.  It is still very challenging but I feel better about myself after every workout.  So, now that I”m finished, I’m writing this post to update you on my workout and then… well I’m going to join hubby in a movie day since I’m in the mood to be lazy now.  The Blind Side, here I come!!

Happy Saturday!

Mini Me

So Mini Me isn’t so crazy about trailers, but do you blame him?  Last fall, a 3 1/2 hour trip while he was sick was his first time he’d ever been in a trailer.  His 3 1/2 hour trip home was the 2nd.  So heading to Stillwater this time, was only time number 3 of being in a trailer.  He’s not crazy about them…

Because once they got him to OSU, they tried to put him in stocks, which he refused.  Dad wound up having to back him in.  Then he refused to leave, they had to back him back out.  Hey, he knows how to back.

Once he’s in the stocks, they poke and prod and do weird things to him.  Do you blame him for not wanting to go in the stocks??

But out of all the horses that OSU saw around the same time, with the same or similar symptoms, he’s one of the horses that is doing the best.  They wanted him to come back for a follow up visit, and to take some video’s of him to study.  Here they are taking his temperature which was 100.4 degrees.  Normal is 101.5 or lower.  Doing good so far!!

Here she’s listening to his breathing, swollowing, that sort of thing that goes on in his neckal area :).  Like that term?  Neckal…  it’s real technical.

I think he was less than enthused while they were listening to different aspects of his body.  At one point they put a bag over his nose.  Reason for this is you can’t tell a horse to take a deep breath like you do a human, so they put a bag over their nose which causes them to speed up their breathing and when you remove the bag, it causes them to take a deep deep breath.  See what you can learn!!

Here’s where they were doing the video of him walking and trotting down the hallway.  The real kicker is once they were finished the gal who was leading him here walked him straight in to the stocks.  Dad was like, go figure.

Once they were finished with his check up visit, dad and hubby went to load him back in the trailer, which he was having no part of.  Hubby was like, leave him here for a week and he’d be more than happy to get in.  Anyway eventually one of the vets came out and decided to give him a bit of a sedative to calm him down.  Once they did that, I guess another vet came out and wanted to watch him move and they were like, nope, because you won’t get a good view now.  So hubby and the vet linked arms and picked his butt up off the ground which caused him to put his front feet up into the trailer and they got him loaded.  Silly goose!

His check up went good and they said out of all the horses who have survived, he’s doing better than most.  Finger’s crossed we continue that way!  We’re working now on breeding mares back for 2014 babies.

Rib Crib – Stillwater, OK

If you remember back last fall, my parents made a middle of the night trip to Stillwater with Squirty and then 2 days later dad, hubby and I made a mad dash back to Stillwater with Mini Me trying to save him.  We were able to save Mini Me, especially since the few days prior with Squirty, we knew the warning signs.

There’s still no sign as to what caused that to happen, however there were apparently other cases of the same thing happening to other horses near the Stillwater area.  (not sure the distance)

Anyway one of the vets at OSU called my dad and asked how Mini Me was doing and if dad would be willing to bring him back down for a follow up visit.  Dad said he would so last Wednesday dad and hubby took off work and headed for Stillwater.

They were running ahead of schedule when they got to Stillwater so they decided to grab a bite to eat before they had Mini Me’s appointment with the Vet School.  They chose to eat at Rib Crib.

Knowing that I love my restaurant reviews (which I haven’t really done much of lately) they were soo kind to take photos for me.  Although I got some smart alic photos as well… but I won’t share and bore you with those :).  Ok maybe just one 🙂

The Rib Crib sauces.  There is Hot Sauce, Mild sauce and a Carolina Mustard Sauce.  Ahhh I just love Rib Crib and haven’t actually eaten at one in a while.  Looking at these pictures I sooo want to go ASAP! 🙂

Mudflap

Have I ever told you about Mudflap and knowing his days?

I really think this dog counts the days between Saturday’s so that he knows when the next Saturday hits.  Usually he goes for a ride with dad to the feed store every Saturday morning.  It is their ritual.  Now he gets extra rides in there too, but come Saturday morning, when dad walks out the door, Mudflap will go sit by the garage door until dad opens it and drops the tailgate.

Now if there is a Saturday when dad doesn’t open the tailgate for whatever reason, no joke, Mudflap pouts.  He will pout and throw a little “temper tantrum” until he gets his ride.

That’s just how it is.  The life of a dog.  Man’s Best Friend.  I wonder if Mudflap knows that he has 2 more days to wait until his next feed store trip?  Nope, I know the answer, the answer is yes, he knows.

Sunday Night Dinner, Finding Arrows, And Fixing Hair

Saturday night I slept on the couch.  Poor hubby was snoring up a storm and I couldn’t sleep in bed so I slept on the couch.  About 7am Sunday morning I came back to bed to take my chances and fell into a deep sleep.  Around 8:30 Earl sent me a text message but I could have sworn that someone rang the doorbell.  A few minutes later I was back in dream land and thought there was a woman walking down the hallway asking if someone was here.  Turns out it was the phone telling me I had a text and Tbug getting up to head to the bathroom.

Finally I drug myself out of my sleepy stupor and checked the text messages.  Earl asked if I had a Panini Press, because she thought wraps would be good for Sunday Night Dinner.  I told her I did, so it was set, the theme was Wraps or a side to go with the wraps.

For the Wraps we had the option of Chicken or Steak (and I must say the steak was fabulous!!), Salad, Spinach, dressings, mayo, mustard, tomatoes, cucumbers, sweet pickles on either a plain flour wrap, a spinach wrap or a tomato basil wrap.

When I walked in the door Earl was working on making Kale Chips.  Yum!  None of us girls could stay out of them.

I accidentally forgot the panini press and our scales so I had to run home.  When I was leaving I saw Tbug leading Moo around on TB’s horse.  When I got back, Tbug was on the horse.

I walked back in the house and walking around taking my usual pictures and wound up with these too.  Diver Girl may disown me after this…

Hubby and I made corn.  Pokey disowned us because he can’t have corn and he likes corn.  Darn, need to make a mental note!

TB went out and checked on the critters and Tbug and Moo went to help him.  They came back in these eggs for hubby and I to take home and put in our incubator.

Then Diver Girl brought out the dessert.  OMG yum!

Although Doti and I actually wound up wearing some….

Once we got cleaned up, then Doti went to shooting bows with the boys.  Mr. T and Pokey were giving her pointers.  She lost an arrow across the road in the neighbors field.  Hubby then found my arrow from last week.  Woohoooo!

And just for fun, the piggies wanted a to appear on the blog

Just before we went to leave Tbug and Moo decided to do Doti’s hair for her.  Doesn’t she look so cute!

See, you just never know what we’ll be up to…. can you wait to see next week?  I’m not sure I can :).

p.s. For some reason yesterday’s post didn’t hit readers, so not many saw it, so if you want to get caught up, our baby boy has a name finally!  Check it out!!

Cream Cheese Corn… YUM!

One recipe that my friend has us stuck on is Cream Cheese Corn.  Earl comes up with some of the best recipes!  What you need:

1 bag of frozen corn (16 oz)
1 pkg (8oz) Cream Cheese
Salt & Pepper
Sugar – I would avoid this!  Something we tried and I didn’t like.

So place the frozen corn in a pan over medium to medium-high heat (depending on how much of a hurry you’re in :)) (more…)

Little Boy Finally Has a Name

Before I begin today’s post, could I ask a favor of you in praying for my grandma.  She’s having surgery today on her ankle.

**************************************

So it has only taken a week, but our little boy has a name finally.  Before I share with you his name though, I need to tell you the background story of his name.  It’s a good one!

So my dad and I work for the same company not doing the same job but doing jobs that are closely related, so names I’ve heard what feels like my whole life, I get to actually talk to these people now.  So a week ago Monday I got a phone call from one of my dad’s people saying he needed help but promised my dad he wouldn’t call him again that day so could I help.  Well Yes, I can help :).

So while we were waiting on the system to upload/update, etc side conversations were rolling and our new baby came up.  He asked me what his name was and I told him we hadn’t decided yet so he decided we needed to name him “Kernel Sanders.”

I told him this baby wasn’t a chicken to which he replied, neither was Kernel Sanders.  So we went back and forth while on the phone and then once his problem was solved, we hung up.  I had a picture of the baby so I shot it to him.

The next day I got a phone call from Greg informing me that Colonel Sanders was taken by a Tennessee Walking Horse up in New England somewhere, but we could spell it with a K and be okay.

So the next day I received an email from Greg:

That’s not his name……  But he’s doin good.  I’m betting he wishes he was back in momma today since the weather turned off cold and nasty.

The next day my dad sends my husband an email and cc’ed me:

Nicole’s Hubby:
Since your colt is still un-named (at least to my perception) while I was feeding earlier today I came up with what may be the greatest name ever.  Why don’t you name him Kolonel Sanders or perhaps even Kernal Sanders.  Both of them would be unique.
Dad

I knew who the culprit was:

So I had to follow through on my threat! And that’s just what I’m doing.  Greg wound up getting himself a blog post….

And one last thing before I reveal the babies name, an email that went out this morning to Mr. Greg….

By the way, just so we’re all clear, his name is not Colonel or Kernal Sanders.

But we all did agree his barn name would be Colonel

My dog likes mail

If there is one thing I can tell you about a puppy, they like to eat things.  Add a Labrador into the mix and I’m not sure they out grow that type of thing until around 2 or so… unless you have my Lab.  She loves to eat mail.

So anytime we have packages, we have a note on our front door for the delivery people on where to put packages.  So when I pulled into the driveway the other day, this is the sight I saw.  Not good.  And Marlie wasn’t coming anywhere near me.  Oh boy.

So I got on the phone and called hubby to ask if he planned on having a package delivered to the house.

Hubby: Hi Hunny
Me: Were you expecting a package in the mail?
Hubby: Why?
Me: Were you expecting a package delivered to the house?
Hubby: Why?
Me: Because I found a box that has been ripped open.  What am I looking for?
Hubby: Oh crap
Me: I’m going to look for it, but WHAT am I looking for?
Hubby: You won’t find it…
Me: Grrr, what am I looking for, because I think I found some brass
Hubby: That’s what you’re looking for but 1,000 pieces.  I’m almost home.
Me: Alrighty, I’ll start picking it up.

And this is what I had to pick up….

We found a little over half here and then wandered around the yard thinking there would be more.  Sure enough, I found more in the grass.  We’re pretty sure I found them all, but one may never know.

Don’t worry, I still love my Lab!  But sometimes she’s frustrating 🙂
